Cream of Potato Soup

Yields: 3-4 servings
Ingredients

½ cup Chopped Onion3 Tbsp. Butter or Margarine2 cups Diced, Pared Potatoes¾ cups Water1 ½ tsp. Salt1/8 tsp. Pepper2 cups Milk or 1 cup Milk & 1 cup Light Cream
Directions

In large saucepan, saute onion in butter until golden.Add potatoes, water, salt and pepper.Cover and cook slowly until potatoes are tender. Add milk.Cook until boiling.Correct seasoning to taste.Serve hot.Garnish with chopped parsley.
