Cream of Potato Soup

Yields: 3-4 servings

Ingredients

  • ½ cup Chopped Onion
  • 3 Tbsp. Butter or Margarine
  • 2 cups Diced, Pared Potatoes
  • ¾ cups Water
  • 1 ½ tsp. Salt
  • 1/8 tsp. Pepper
  • 2 cups Milk or 1 cup Milk & 1 cup Light Cream

Directions

  • In large saucepan, saute onion in butter until golden.
  • Add potatoes, water, salt and pepper.
  • Cover and cook slowly until potatoes are tender. Add milk.
  • Cook until boiling.
  • Correct seasoning to taste.
  • Serve hot.
  • Garnish with chopped parsley.
