Florentine Cookies

Ingredients

  • ¾ cup Heavy Cream.
  • ¼ cup Sugar
  • ¼ cup sifted Flour
  • ½ cup Finely Chopped Almonds
  • ¾ cup Orange zest (use small cheese grater to scrape off zest ust use orange part - not white part)

Directions

  • Stir cream and sugar together to blend well.
  • Stir in flour, almonds. and zest.
  • Drop onto heavily greased and floured sheet pan, several inches apart, then spread them to desired width with a knife or spatula.
  • Bake at 350-degrees for 10-12 minutes (until just browning around edges).
  • Let cool for a second or two then roll them up (like a fat pencil) and let them cool completely.
  • Fill with sweetened cream cheese and berries.
  • You can add a little heavy cream or sour cream to the cream cheese to make it smooth.
