Mexican Snapper

Ingredients

  • 1 ½ lbs.Red Snapper or Cod Fillets
  • ½ cup Chopped Cilantro or Parsley
  • ½ cup Finely chopped Toasted Almonds
  • ¼ cup Butter or Margarine
  • Lime Juice
  • Salt & Pepper to taste
  • Diced Avocados

Directions

  • Place fillets in a baking dish.
  • Sprinkle with cilantro ( or parsley) and almonds.
  • Melt butter or margarine in a saucepan.
  • Add limejuice and season to taste. Pour over fish.
  • Cover and bake in 350-degree oven for 30 minutes.
  • Sprinkle with diced avocados and serve.
