Pineapple Sweet Potatoes

Ingredients

  • 2 cans (1 lb. 1 oz. each) Sweet Potatoes
  • 1 cup Brown Sugar (packed)
  • 6 Tbsp. Butter
  • 1 bag Miniature Marshmallows
  • 2 cans (8 ¾ oz. each) Crushed Pineapple ( drained)
  • 1 tsp. Salt (scant)

Directions

  • In a medium skillet, combine brown sugar, butter, pineapple and salt.
  • Cook over medium heat, stirring constantly, until smooth and bubbly.
  • Add sweet potatoes.
  • Stir gently until glazed.
  • Pour potato mixture into a casserole dish.
  • Top with marshmallows.
  • Heat in the oven at 400 degrees for 10-15 minutes, or until marshmallows are toasted.
