Pumpkin Muffins

Ingredients

  • 2 c canned pumpkin
  • 4 eggs (or egg substitute)
  • 1 1/3 c dry powdered milk
  • ¼ c flour
  • 4-6 Tbsp. Brown Sugar substitute
  • 2 tsp. Baking Soda
  • 2 tsp. Baking Powder·
  • 2 tsp. Cinnamon
  • 1 tsp. Nutmeg
  • ¼ tsp. Salt
  • ½ cup Raisins ( optional)
  • 1 ½ cups Grated Carrots

Directions

  • Spray 24 muffin tins.
  • Preheat oven to 350 degrees.
  • Mix pumpkin, eggs, dry milk, flour, sugar substitute, soda, and baking powder, cinnamon and salt with a fork.
  • Stir in fruit and carrots.
  • Bake 20 minutes.
