Shrimp Quiche Sharon

Yields: 6 servings

Ingredients

  • ¾ lb. Peeled and De-veined cooked Shrimp
  • (3 6-40 count or smaller)
  • 1 cup sliced fresh Mushrooms
  • ¼ cup chopped Green Onion and tops
  • ¼ cup melted Margarine or Butter
  • 4 Eggs (well beaten)
  • 1 ½ cups Half and Half or Light Cream
  • 1 tsp. Salt
  • 1/8 tsp. Dry Mustard
  • 1/8 tsp. Nutmeg
  • 1 cup shredded Mozzarella Cheese
  • 1 unbaked 9" Pie Shell

Directions

  • Chop shrimp.
  • In a small saucepan, cook mushrooms and green onion in margarine until tender.
  • In a large bowl, combine eggs, half and half, salt, dry mustard, nutmeg and cheese. Fold in shrimp.
  • Pour mixture into pie shell.
  • Bake at 400-degrees for 15 minutes.
  • Reduce heat to 300-degrees and continue to bake for 30 minutes or until a knife, when inserted in the center of quiche, comes out clean.
  • Let stand 5 minutes before serving.
  • Approximately 460 calories per serving.
