Shrimp Quiche Sharon

Ingredients

¾ lb. Peeled and De-veined cooked Shrimp(3 6-40 count or smaller)1 cup sliced fresh Mushrooms¼ cup chopped Green Onion and tops¼ cup melted Margarine or Butter4 Eggs (well beaten)1 ½ cups Half and Half or Light Cream1 tsp. Salt1/8 tsp. Dry Mustard1/8 tsp. Nutmeg1 cup shredded Mozzarella Cheese1 unbaked 9" Pie Shell

Chop shrimp.In a small saucepan, cook mushrooms and green onion in margarine until tender.In a large bowl, combine eggs, half and half, salt, dry mustard, nutmeg and cheese. Fold in shrimp.Pour mixture into pie shell.Bake at 400-degrees for 15 minutes.Reduce heat to 300-degrees and continue to bake for 30 minutes or until a knife, when inserted in the center of quiche, comes out clean.Let stand 5 minutes before serving.Approximately 460 calories per serving.
