Spicy Gingerbread with Cinnamon Pear Sauce

Yields: 9 servings

Ingredients

  • 2 c flour
  • ½ c packed light brown sugar
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ c butter or margarine (softened)
  • 1 tsp salt
  • 1 c light molasses
  • ¼ c buttermilk
  • ¼ tsp ground cloves
  • 1 tsp cinnamon
  • 2 cans pear halves in syrup
  • 2 tbsp sugar
  • ½ tsp ground cinnamon
  • 1 tsp lemon juice

Directions

  • Preheat oven to 325 degrees.
  • Grease/flour 9'' square baking dish.
  • Combine all ingredients except Cinnamon Pear Sauce in large bowl.
  • Beat with electric mixer at low speed until well blended, scraping side of bowl with rubber spatula frequently.
  • Beat at high speed 2 minutes more.
  • Pour into prepared pan.
  • Bake 50-55 minutes until wooden toothpick inserted in center comes out clean.
  • Cool in pan on wire rack about 30 minutes.
  • Cut into squares. Serve with warm pear sauce.
  • To make pear sauce, drain pear halves, reserved ¼ c syrup.
  • Blend Pears, reserved syrup, sugar, lemon juice and cinnamon in blender until smooth ( can use a food processor).
  • Just before serving, place pear sauce in medium saucepan.
  • Heat until warm. Makes 2 cups of sauce.
