Stuffed Green Peppers

Yields: 6 servings

Ingredients

  • 6 large Green Bell:Peppers
  • 5 cups Boiling (salted) Water­
  • I lb. Ground Beef
  • 2 Tbsp. Chopped Onion
  • 1 tsp. Salt
  • 1/8 tsp. Garlic Salt
  • 1 cup Cooked Rice
  • 1 can (15 oz.) Tomato Sauce

Directions

  • Preheat the oven to 350 degrees.
  • Cut a thin slice from the stem end of each pepper. Remove all seeds and membranes. Wash inside and outside thoroughly.
  • Cook peppers in boiling (salted) water for 5 minutes, drain.
  • Cook and stir ground beef and onion in a medium skillet until onions are tender. Drain off fat.
  • Stir in salt, garlic salt, rice and 1 cup of the tomato sauce. Heat through.
  • Lightly stuff each pepper with ½ cup meat mixture.
  • Stand the peppers upright in an ungreased baking dish (8x8x2).
  • Pour remaining tomato sauce over peppers.
  • Cover and bake 45 minutes. Uncover and bake an additional 15 minutes.
