Sweet Jam Muffins

1 Egg½ cup Milk¼ cup Oil1 ½ cup All Purpose Flour ½ cup Sugar2 tsp. Baking Powder½ tsp.Salt1/3 c jam or jelly

Preheat oven to 400 degrees.Grease muffin cups.Beat eggs.Add milk and oil. Stir.Mix in remaining ingredients ( except jam), just until flour is moistened. Batter should be lumpy.Fill muffin cups only ½ full.Drop l tsp. jam or jelly in center of each and add batter to fill cups 2/3 full.Bake 20-25 minutes, until golden brown. Immediately remove from pan.NOTE!! If using self-rising flour, omit baking powder and salt.
