Sweet Jam Muffins

Yields: 12 muffins

Ingredients

  • 1 Egg
  • ½ cup Milk
  • ¼ cup Oil
  • 1 ½ cup All Purpose Flour ½ cup Sugar
  • 2 tsp. Baking Powder
  • ½ tsp.Salt
  • 1/3 c jam or jelly

Directions

  • Preheat oven to 400 degrees.
  • Grease muffin cups.
  • Beat eggs.
  • Add milk and oil. Stir.
  • Mix in remaining ingredients ( except jam), just until flour is moistened. Batter should be lumpy.
  • Fill muffin cups only ½ full.
  • Drop l tsp. jam or jelly in center of each and add batter to fill cups 2/3 full.
  • Bake 20-25 minutes, until golden brown. Immediately remove from pan.
  • NOTE!! If using self-rising flour, omit baking powder and salt.
