Sweet Potato Crunch

Ingredients

  • 3 cups (canned) Sweet Potatoes (drained) 1 cup Sugar
  • ½ tsp.Salt
  • 2 Eggs
  • 4 Tbsp melted Butter or Margarine
  • ½ cup Milk
  • 1 tsp. Vanilla
  • INGREDIENTS FOR TOPPING
  • 1 cup Brown Sugar
  • 2/3 cup Flour
  • 1 cup Chopped Pecans
  • ½ cup melted Butter or Margarine

Directions

  • Preheat the oven to 350 degrees.
  • Combine the first 7 ingredients in a large mixing bowl. Mix well with electric mixer.
  • Pour into 9"x13" baking dish. Set aside.
  • In a small to medium bowl, combine topping ingredients. Mix well with spoon.
  • Using clean hands, sprinkle over the sweet potato mixture the best you can.
  • Bake for 45 minutes.
  • Serve hot or cold.
