Zucchini Cake

Ingredients

  • 3 Eggs
  • 2 c sugar
  • 1 c oil
  • 2 cups Flour
  • ½ tsp.Salt
  • 2 tsp. Soda
  • 3 tsp. Cinnamon
  • ½ tsp.Baking Powder
  • 2 cups Zucchini (grated)
  • 3 tsp. Vanilla
  • 1 cup Nuts
  • ½ cup Sugar
  • 1 Tbsp. Butter
  • ¼ cup Water

Directions

  • In a bowl, beat at high speed eggs, sugar and oil. Set aside.
  • In a separate bowl, sift together flour, salt, sode, cinnamon and baking powder.
  • Add egg mixture along with zucchini, vanilla and nuts.
  • Bake in greased and floured pan at 350-degrees for 45 minutes. Make slits in cake.
  • Mix together topping ingredients together in a saucepan and bring to a boil.
  • Pour topping over cake.
